Ingredients

    Milk, 2%, 3/4 cup
    Coconut essence/flavour, 1 tsp
    Lemon Juice, 1 lemon
    Lemon Zest, of 1 lemon
    Baking Powder, 1/2 tsp
    Baking Soda, 1/2 tsp
    Whole Wheat Flour, SelfRaising, 1/4 cup
    Splenda (or other dry sweetener), 1/4 cup
    Lite Cottage Cheese, 50 g
    Apple Sauce / Stewed Apples, 20 g
    Cereal, Breakfast Biscuits 2 biscuits (30g)
    Bran, unprocessed, 40 g
    Coconut, Shredded, 15 g

Directions

Combine dry ingredients - whizz in blender.
Combine wet ingredients - whizz in blender.
Mix the two parts together.
Divide into muffin cups evenly.
Bake for 15-20 minutes.
Wait till completely cool before removing from cups (and eating!)
