Ingredients

2 (7 inch) whole wheat pitas, cut into 1/2 inch pieces
2 teaspoons olive oil
1 pound chicken breast medallions, cut into 1/2 inch pieces
.25 teaspoon freshly ground black pepper
1 cup shelled ready toeat soybeans
.25 cup freshly chopped cherry tomatoes
.25 cup dry white wine
.25 cup lemon juice
1 teaspoon minced garlic 2 cups halved cherry tomatoes
.5 cup vertically sliced Vidalia or other sweet onion
3 tablespoons chopped fresh mint
Directions
serves 4 (1.5 cup servings)
1. Preheat broiler to 350.
2. Arrange the pitas ina single layer on a baking sheet, and broil 2 minutes or until roasted.
3. Heat oil in a large nonstick skillet over medium high heat. Sprinkle the chicken with pepper. Add chicken to the pan; saute 2 minutes or until done. Add soybeans, chooped tomatoes, wine, lemon juice, and garlic; cook 1 minute or until thoroughly heated, stirring occassionaly.
4. Combine the chicken mixture, toasted pitas, halved tomatoes, onion, and mint, tossing gently.
