Tofu Teriyaki

Introduction

Number of Servings: 6

Ingredients

    1 package flat rice noodles
    1 package low fat extra firm tofu
    2 cups peas
    1 cup fresh bean sprouts
    5 tbsp (about 1/2 bottle) of teriyaki marinade

Directions

1. Slice tofu into 3 rectangular "slabs" and press into paper towel to remove excess water (this will allow the tofu to soak up all the flavours).

2. Chop tofu into small cubes. Place into tupperware and mix with marinade. Leave in fridge at least 30 minutes.

3.. Place rice noodles in a bowl and cover with boiling water. Let soak for 7 minutes, then rinse in cold water.

4. In a large wok or stir fry pan, add tofu, noodles, peas, and bean sprouts. Add oil or cooking spray if needed.

5. Cook, stirring frequently, about 15 minutes, or until peas are cooked through.

Makes 6 servings of about 1 cup prepared.
