Lemon Rice Pudding

Number of Servings: 4

Ingredients

    Wash 1/4 cup rice (basmati or jasmine)
    With a vegetable peeler, take off strips about 1/4 inch wide from a lemon and chop finely
    Put rice, lemon zest, 1 1/2 tbsp sugar and 1 pint (2 cups) half and half in a flame proof dish
    Cook in a 250 degree oven for 2 1/2 hours, stirring every 45 minutes. Then add the juice of one lemon
    If the pudding is too solid, add some more half and half
    Chill pudding well
    Sprinkle the top with brown sugar and run it under the broiler
