They offer low-fat dessert options in their magazines, but this isn't one here (But it's a nice treat with a lot of fiber and oats!) Number of Servings: 16

Ingredients

    2 sticks butter
    1 cup granulated sugar
    1 cup brown sugar
    2 eggs

    1 cups whole wheat flour
    cup almond meal
    1 cup chopped walnuts
    tsp salt
    1 tsp baking powder
    1 tsp ginger
    3 cups oatmeal

Directions

With a mixer, beat the butter and sugars until fluffy. Add eggs, one at a time. Sift together the remaining ingredients except for the oats. Combine the wet and the dry, and stir in the oats. Don't use quick-cooking oats for this. Roll into 2-inch balls (you should have about 16 cookies per batch) and bake for 22-25 minutes. The cookies are done when only the edges are slightly brown (you don;t want to overbake them!)
