Stuffed Red Peppers

Ingredients

    1 lb Jennie-O Lean Ground Turkey
    6 Red Peppers Peppers
    1 cup chopped onions
    1 cup cooked Brown Rice
    2 cups Hunts Diced Fire Roasted Garlic Tomatoes
    1 cup Sorrento Reduced Fat 4 Cheese Italian Blend

Directions

Preheat oven to 350 degrees

Brown turkey and onions in a skillet
When fully cooked, mix in rice and diced tomatoes (including juices), remove from heat

Cut tops off peppers, then cut in half to create 2 "cups". Scoop out insides. Place on a baking sheet (I cover the sheet in alum foil)

Divide turkey mixture into 12 equal portions, and spoon into pepper halves. Top each half with a little of the cheese, and bake for 20 minutes or until cheese is lightly browned.
