Baked Buffalo Chicken Nuggets

Introduction

Fried, battered, dripping sauce--hot wings are calorie bombs! But not these. Fried, battered, dripping sauce--hot wings are calorie bombs! But not these.
Number of Servings: 2

Ingredients

    1/3 cup whole-wheat bread crumbs
    1 teaspoon onion powder
    1 teaspoon garlic powder
    1 teaspoon cayenne pepper
    1 teaspoon black pepper
8 ounces boneless, skinless chicken, cut into bite-size chunks
    2 tablespoons hot sauce

Tips

Serve with more hot sauce, if desired, or blue cheese dressing. (Nutrition info not included!)
Don't forget the celery!

Directions

Preheat the oven to 375 degrees Fahrenheit.
Combine the bread crumbs, onion powder, garlic powder, cayenne pepper, and black pepper in a shallow dish.
Place the chicken and hot sauce in another shallow dish, stirring well to evenly coat the chicken.
Place the chicken, one piece at a time, in the breadcrumbs.
Use one hand for the wet ingredients and one for the dry ingredients so that the bread crumbs will not clump.
Place the chicken on a baking sheet coated with cooking spray.
Bake for 10 minutes, then turn over the chicken and bake for an additional 7-8 minutes or until fully cooked.

If you had a problem with the oven temp, it might be your oven needs adjusting. Hang an Oven Temperature Gauge from a center rack to check. To adjust, simply pull off knob. There will be a small set screw. Turn left to raise oven temp and right to lower it. Over time, all ovens need adjusting. - 2/14/11

This chicken was so good and easy to make. My husband loved it. We made a triple recipe and divided it up into single serving sizes so we could grab some for lunch. I will definitley make it again. - 9/23/09

Ovens can vary, I found that 375 wasn't hot enough for this recipe and the coating was soggy. When I bumped the temperature up to 450 the chicken crisped up nicely. - 2/7/10

MMMM....These were very yummy...I used panko bread crumbs and Crystal hot sauce...I used about 3 tsp of cayenne...but i love spicy food...this is the first buffalo chicken I didn't have to dip in anything...very addicting! - 6/3/10

Cheg Meg did it again, they were spicy! My husband was wary when I was making them, then he couldn't get enough! They were a little spicy for me so I may tone it down next time but they were still amazing. Make sure not to spray nonstick spray, it will make them soggy and cook at a higher temp - 7/1/10

so go. I added chipotle chili powder to the bread crumb mixture - I used panko cause it was what I had - and I actually used less than the recipe called for. my husband gave them 2 thumbs up. - 10/16/09

I love hot, but these were a bit much for me. I adjusted the second time by mixing the Tabasco with lime juice and it came out perfectly! - 6/26/10

The seasoning was good but wow - it sure did pack a punch! If I make these again I'll use something else besides the Tabasco... :) - 4/16/10

Made this for my family last night. I substituted gluten free breadcrumbs for the breadcrumbs in the recipe. A little too spicy for the kids, but hubby was happy with them. He dipped them in ranch dressing. - 8/6/10

made this tonight. It isn't something I will be making again. The tobasco flavor is what we didn't like about it. For refrence, I purchase the best choice bagged frozen boneless skinless chicken tender and 4 tenders was the perfect amount for this recipe - 7/22/10

These wings are very good. They will become a part of our weekly meals. Based on the reviews, I did not use as much cayanne and should have used what the recipe said. I can wait to make these again. Thanks for sharing! - 8/12/10
