Introduction

Fried, battered, dripping sauce--hot wings are calorie bombs! But not these. Fried, battered, dripping sauce--hot wings are calorie bombs! But not these.
Number of Servings: 2

Ingredients

    1/3 cup whole-wheat bread crumbs
    1 teaspoon onion powder
    1 teaspoon garlic powder
    1 teaspoon cayenne pepper
    1 teaspoon black pepper
    8 ounces boneless, skinless chicken, cut into bite-size chunks
    2 tablespoons hot sauce

Tips

Serve with more hot sauce, if desired, or blue cheese dressing. (Nutrition info not included!)
Don't forget the celery!


Directions

Preheat the oven to 375 degrees Fahrenheit.
Combine the bread crumbs, onion powder, garlic powder, cayenne pepper, and black pepper in a shallow dish.
Place the chicken and hot sauce in another shallow dish, stirring well to evenly coat the chicken.
Place the chicken, one piece at a time, in the breadcrumbs.
Use one hand for the wet ingredients and one for the dry ingredients so that the bread crumbs will not clump.
Place the chicken on a baking sheet coated with cooking spray.
Bake for 10 minutes, then turn over the chicken and bake for an additional 7-8 minutes or until fully cooked.

    If you had a problem with the oven temp, it might be your oven needs adjusting. Hang an Oven Temperature Gauge from a center rack to check. To adjust, simply pull off knob. There will be a small set screw. Turn left to raise oven temp and right to lower it. Over time, all ovens need adjusting. - 2/14/11

    This chicken was so good and easy to make. My husband loved it. We made a triple recipe and divided it up into single serving sizes so we could grab some for lunch. I will definitley make it again. - 9/23/09

    Ovens can vary, I found that 375 wasn't hot enough for this recipe and the coating was soggy. When I bumped the temperature up to 450 the chicken crisped up nicely. - 2/7/10

    MMMM....These were very yummy...I used panko bread crumbs and Crystal hot sauce...I used about 3 tsp of cayenne...but i love spicy food...this is the first buffalo chicken I didn't have to dip in anything...very addicting! - 6/3/10

    Cheg Meg did it again, they were spicy! My husband was wary when I was making them, then he couldn't get enough! They were a little spicy for me so I may tone it down next time but they were still amazing. Make sure not to spray nonstick spray, it will make them soggy and cook at a higher temp - 7/1/10

    made this tonight. It isn't something I will be making again. The tobasco flavor is what we didn't like about it. For refrence, I purchase the best choice bagged frozen boneless skinless chicken tender and 4 tenders was the perfect amount for this recipe - 7/22/10

    These were really good. I made the recipe as is. Use tongs and not your hand when pulling the chicken out of tabasco (or use a container with lid and not the ziploc bag). My hand burned for hours!!! - 2/8/10

    I somewhat agree with those who are upset about the recipe being copied from the original author, ANGIERSJ.     Why wasn't the person who came up with the recipe acknowledged in this article? I have considered submitting a recipe myself but if this could happen to my recipe with Chef Meg posting it as a approved by her then I say why bother.     This recipe came right on time to my inbox! I used Texas Pete hot sauce (3 tablespoons--I love it spicy!) and panko bread crumbs. I also ended up cooking them for about an extra 10 minutes at 375 to get them nice and crispy. They were perfect for a light lunch on a Sunday afternoon! - 6/5/11

    I've made these for years. I dip my chicken in a mixture of lowfat buttermilk and buffalo sauce before rolling in breadcrumbs... sometimes panko. Also, I give the chicken a quick squirt of the nonstick spray. - 2/28/11

    wow wow wow and WOW!!! This was HOT!!! They were good, but very hot! Hah, i'm from the UK so i think we're a little wussy compared to you guys in the US! I'll maybe take other's advice on using a milder sauce, but this recipe is a keeper and so nice and easy!! TRY IT, you'll love it!! - 2/26/11

    Not a huge fan of this one. The bread crumbs didn't stick well and there was not enough of them for all 8 ounces of chicken. Would give this another try, but would have to use more breading and maybe an egg to make it stick better. Flavor was pretty good though. - 2/20/11

    I made this for my husband (who doesn't like "health" food) and me. It was incredibly. Added a little blackened seasoning and Old Bay to the bread crumb mixture (our favorite flavor of wings from our local bar), and it turned out awesome. No more going out for wing night for us! - 2/19/11

    used Franks's hot sauce and baked on parchment paper to save a couple calories. Served with cucumber salad w. yogurt dressing to tone it down some. Loved it and next time will try it with a whole breast per serving, adjusting cooking time. Thanks for a new favorite! - 2/12/11

    Made this for dinner tonight. I halved the cayenne pepper but still too spicy. I also cooked them on 400F for about 20 minutes... not crispy. Next time i would cook them on a higher temp and i'm going to use BBQ sauce instead of tobasco sauce & i'm going to use only a 1/4 teaspoon of cayenne pepper. - 2/10/11

    Very good and I will definitely be making these again. I doubled the recipe so we could have leftovers. My husband doesn't like hot spicy food so I omitted dipping his chicken in the hot sauce. Caution, don't double the cayenne pepper if you double the recipe. - 2/9/11

    Glad to see that the WOWS far outweigh the OK's and nays -- I am totally a boneless "wing" girl and these are da bomb! I did adjust to the higher temp as recommended and I used whole wheat panko because that is what we use. YUMMY. Try them with Bolthouse Farms Blue Cheese which is low in cal/fat! - 2/8/11

  • Loved these! So did hubby who's a big buffalo wing fan. NOTE: As they cool down the moisture from chicken will surface. To keep nuggets crisp very lightly spray tops only with cooking spray before cooking. We used parchment paper underneath with no oil. Worked great! - 1/21/14

  • I made this tonight for my family as a Buffalo Chicken Salad and it was very good. I doubled the recipe, but I did not the Cayenne Pepper (thankfully). I put the chicken in a bag with the hot sauce and then dumped that chicken into a bag with the bread crumbs. Easy. Good idea for football Sundays. - 9/16/13

  • I cut calories even further in my version. I use a little broth and Pam spray to stir fry 8 oz seasoned chicken breast strips cut small. Turn off heat. Mix in 1-2 tablespoons Sweet Baby Ray's Wing sauce (15-30 cals). Makes 2 servings.

  • Wonderful and easy. I did not add the spices to the bread crumbs. I marinated the chicken in Sriracha for the time it took for the oven to heat and then breaded the bites. This was enough flavor.
