Bon Appetit Creole Chicken and Okra Gumbo

Introduction

The February 1997 recipe also included a 14 1/2 ounce can of low sodium chicken broth but I left it out for a nice, thick stew. Saved a bunch on the sodium too! Ingredients

    2 T olive oil
    2 T all-purpose flour
    1 small onion, chopped
    1 10oz pkg. sliced frozen okra
    1 14 1/2 oz can diced tomatoes
    1/2 pound chicken tenderloins or boneless thighs, cut into 1-inch pieces
    1 t ground thyme
    1 t hot pepper sauce
    garlic salt and pepper to taste

Directions

Stir vegetable oil and flour in large saucepan over high heat until smooth and dark brown, about 3 minutes. Mix in onion, okra and tomatoes with the juice; simmer 3 more minutes. Sprinkle chicken with thyme, garlic salt and fresh cracked pepper. Add to saucepan. Simmer uncovered until chicken is cooked through, about 10 more minutes. Season to taste with hot pepper sauce and serve over brown rice, if desired.
