Submitted by: CHEEKYCHOOK

Introduction

Basil can be substituted with parsley or coriander. If you want it to be more garlicky, add more garlic, crushed, into the onions when cooking them. Basil can be substituted with parsley or coriander. If you want it to be more garlicky, add more garlic, crushed, into the onions when cooking them.

Ingredients

    Garlic, 6 cloves finely sliced
    Onions, raw, 1 cup, chopped
    Basil, handful of leaves, torn
    Red Ripe Tomatoes, 1 cup cherry tomatoes, halved
    Pasta, wholewheat, uncooked, 270 grams
    Olive Oil, 4 tbsp
    chilli, red very finely chopped

Directions

Whilst the pasta is cooking, prepare the sauce;
heat tbsp of the oil in fry pan, add chopped onion, cooking over a low heat to soften. Add the chopped chilli and sliced garlic, chopped red peppers and halved cherry tomatoes.

When everything is cooked, drain the pasta and stir in the remaining olive oil and the 'onion' mixture. Serve immediately, sprinkling the chopped basil on top.

Add grated parmesan to serve, but don't forget to add in the extra calories!
