Baked Zucchini Halves

Introduction

A new way to use extra zucchini!! A new way to use extra zucchini!!
Number of Servings: 2

Ingredients

    1 medium zucchini (about 196 grams)
    2 medium slices of tomato, chopped
    10 black olives, large, sliced
    1/4 cup mozzarella cheese, part skim, low moisture
    olive oil (I use about 1/4 tsp)

Directions

Preheat oven to 400.

Brush both sides of zucchini VERY lightly with olive oil

Arrange 1/2 of the tomatoes, olives, and cheese on top of the zucchini.

Bake for 30 minutes, or until zucchini is cooked through.

(When I make this, I make one half zucchini like this for me but make a different one half zucchini for my husband with peppers and onions.)
