1 13-oz can of chicken breast meat (drained)
1/2 cup diced red onion
1/2 cup diced celery
1/4 cup sweet peppers (red, yellow or green)
2 tbsp chopped cilantro
2 tbsp capers (drained)
1/4 cup light sour cream
1/4 cup light mayonnaise
1 or 2 tbsp lime juice (yield from 1 lime)
4 8-inch whole wheat tortilla
4 lettuce leaves
Place a lettuce leaf in each tortilla, spread a 1/2 cup of the salad onto the lettuce leaf and roll up everything in the tortilla.
Makes 4 1/2-cup wraps.
