Oatmeal Chocolate Chip Banana Applesauce Muffins

Ingredients

    3 c whole wheat flour
    1/2 c white flour
    1 tsp salt
    1 tsp baking soda
    3/4 tsp baking powder
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    2 1/2 c old fashioned oatmeal
    1 egg
    3 egg whites
    1 cup nonfat vanilla yogurt
    1 ripe banana mashed
    1/2 c unsweetened applesauce
    3/4 c sugar
    1 tsp vanilla extract
    3/4 c milk 1%
    1/4 instant nonfat dry milk
    3/4 c dark chocolate chips
    Pam baking spray

Directions

Preheat oven to 350 degrees.

In a large bowl, combine whole wheat flour, flour, salt, baking soda, baking powder, cinnamon, nutmeg and oatmeal. Make a well in the middle and set aside.

In a medium bowl, mash banana, add eggs, yogurt, applesauce, sugar, vanilla and milk. Mix well.

Slowly add wet ingredients to dry ingredients. Add chocolate chips. Mix well.

Spray cupcake tins with Pam. Bake in preheated oven 350 degrees for about 17 minutes. Makes 30 cupcake sized muffins.
