Slow Cooker Chicken Nacho Topper

Introduction

Stuff that goes on top of chips. yay! nachoes!

Number of Servings: 6

Ingredients

    2 boneless skinless chicken breasts
    1 can of reduced sodium black beans (drained)
    1 can of red kidney beans (drained)
    1 small can cream of mushroom soup (10.5 oz)
    1 can diced tomatoes w/ oregeno, basil and garlic (and no salt added
    1 cup of diced onion
    1 diced bell pepper
    1 tsp hot madras curry powder
    1 tsp red chili flakes
    2 tsp black pepper
    2 tsp garlic powder
    1 tbsp chili powder
    1 tbsp of dried parsley flakes

Directions

Stir together all ingredients into crock pot but chicken and mix them up well. Place chicken on top of mixure and let sit on high for 4-6 hours. When finished drain excess liquid and chop/shred the chicken into small, bite-size pieces.

I like to serve over Clancy's whole grain tortilla chips, lettuce and some reduced fat sharp chedder sprinkled on top. :)
