Introduction

I was hungry tonight, and didn't know what to do. So I just pulled every vegetable I had in the fridge out and started cutting them. I then added in some thawed corn and a can of beans. I was hungry tonight, and didn't know what to do. So I just pulled every vegetable I had in the fridge out and started cutting them. I then added in some thawed corn and a can of beans.
Number of Servings: 6

Ingredients

    * Romaine Lettuce (salad), 6 cup, shredded
    * Red Ripe Tomatoes, 2 plum tomato
    * Onions, raw, 1 large
    * Scallions, raw, 1 medium (4-1/8" long)
    * *bean red kidney, 1 cup
    * Yellow Sweet Corn, Frozen, 2 cup kernels
    * *Pepper, Red Bell (1 Med Pepper / 148g)

Directions

Rinse and chop all ingredients, save the corn and beans, into bite size pieces. Rinse the beans well, and toss into salad with the corn.

You can add in whatever else you have and stretch the servings!
