Fiesta Lime Chicken

Introduction

This tangy chicken dish is simple and delicious. This tangy chicken dish is simple and delicious.
Number of Servings: 8

Ingredients

    4 skinless, boneless chicken breast cut in 1/2
    3 garlic cloves
    1 cup salsa
    Juice of 1 1/2 limes
    1/4 cup reduced-fat ranch dressing
    1 cup shredded reduced-fat Cheddar cheese

Tips

Serve over rice and beans with a side salad.


Directions

Coat a skillet with cooking spray. Place over medium heat.
Saute the chicken for three minutes per side.
Add the garlic.
In a bowl, mix the salsa, lime juice, and ranch dressing. Spread on top of the chicken. Cook another five minutes.
Sprinkle on the cheese, cover and cook until the chicken in no longer pink, about 4-5 minutes.

Makes 8 servings (1/2 breast each)

    Easy to make and my whole family loved the dish. It is also good the next day. I would recommend not adding the cheese until you are ready to serve so that the cheese doesn't melt too much. I have already made this dish twice, that's how much we liked it. Thanks! - 7/2/09

    Okay so this is amazing!!! I didn't use cheese though I used black beans and added them to the pan when everything was simmering. Wow it is moist and soooo tasty!! Try it! - 4/20/09

    This was very good! The sauce is really great over Southwestern Beans and Rice too, and it makes GREAT leftovers! I will definitely make this again. My hubby liked it too. - 6/17/09

    I made this last night and everyone loved it. I got some comments about how it didn't look that pleasing to the eye, but that it still tasted great. I would maybe add some diced red tomatoes and cilantro on top to give it some color. Thanks for the great recipe! - 7/15/08

    Tried this yesterday, salsa (I made) really added a zest. was easy to divide the calories by 8 to calculate my calorie intake. My guys (husband, son, grandson) loved it. Its a repeater! Froze half for another day. - 6/21/09

    Tried this dish tonight. A bit too tart for my taste. I will cut the lime juice in half next time, but still liked it well enough that I'll fix it again. (Went well with Southwestern Beans and Rice dish.) - 2/10/09

    Fantastic! Really does taste a lot like the Applebee's dish. Made my own salsa from a recipe on this site, will definitely be combining ranch and salsa for my normal salad dressing now. Will be in high rotation in my house! Will likely add black beans to add fiber, and serve over brown rice! - 1/13/09

    YUMMO!! I used lite parmasan peppercorn ranch dressing-that's the only ranch I had. It had 2 grams of fat for every 2 tbs. So it added a few more fat grams. I pounded the chicken thin and cooked them on my Foreman Grill, then followed the rest of the recipe. The whole family went crazy! Thanks !!! - 10/12/07

    This was really good ty, I think next time I'll wait till almost the end so the cheese is still nice and gooey on top. The sauce didn't look good but after the simmer process it looked yummy to me. Thanks again. - 6/22/09

    Wow! This recipe was loved by everyone. I made it with brown basmai rice and it had so much flavor my family didn't even realize I fed them "healthy" rice! I did use regular ranch dressing because I hate fat free. The only other change I'd make is I'd make a double recipe nexttime for leftovers! - 6/9/09

    Served this with Santa Fe Beans and Rice and some steamed southwest veggies. My husband said he thought it was too indulgent for a weeknight meal (we're strict through the week, have a cheat meal on the weekend.)     Very good. Low effort for high flavor. I made my own ranch dressing (very easy) and put the cheese on a minute or two before finishing cooking. Makes a lot of sauce! Make rice to go with it. - 4/7/08
