Braised Lentils


Number of Servings: 3


    * Lentils, 1 cup
    * Vegetable Broth, 2 cup
    * White Wine, 4 fl oz
    * Carrots, raw, 1 medium
    * Onions, raw, .5 medium
    * Celery, raw, 4 stalk, small
    * Garlic, 2 cloves minced
    * Olive Oil, 1 tbsp
    * Chopped Fresh Parsely - handful


Heat olive oil in pot and add onion, carrots, and celery. Cook for 5-7 minutes. Add garlic and cook for 1 minute more.

Add vegetable broth and white wine. Bring to a rolling boil and reduce heat. Cook, partially covered, for 25-30 minutes, adding water as needed. Stir occasionally.

Top with fresh chopped parsley.
