BLT (Basil, Lemon & Tomato) Quick Barley Salad

Introduction

This is a quick fresh and filling salad that can be served cold, room temperature or warm. For more protein try adding cooked beans or diced cooked chicken. Ingredients

    2 Cups of Water

    1 Cup of Quick Cooking Barley

    1 - 15 oz. can of fire roasted tomatoes with garlic, drained but NOT rinsed

    the zest of one lemon

    1 C of fresh basil chopped

    1 scallion, chopped

Directions

Cook barley according to package directions.

When finished combine with other ingredients. You could serve this immediately or I like to chill it in the fridge for about two hours to let all the flavors combine. This can be served cold or it is also great at room temperature.
