Chicken Broccoli Roll Ups

Ingredients

    3 cups cooked chicken
    12 Lasagna Noodles Cooked (I used wheat)
    1 cup Fat Free Half -n-Half
    1 cup Chicken Broth (I used the broth from the chicken I cooked)
    1 small onion, chopped
    6 oz Monteray Jack cheese
    1/4 cup chopped red pepper
    1 package frozen broccoli
    3/4 cup Bread Crumbs, seasoned
    2 Eggs
    3 Tbsp of Butter
    3 Tbsp of Wheat Flour

Directions

Saute the onion in the butter and then add the flour to make a rue. Then add the half and half and the chicken broth and stir until blended, bring to a boil and let thicken. Remove from heat and slowly blend in the cheese until melted.

Cook chicken to your preference (grill, bake, boil) chop to make 3 cups. Mix the chicken, broccoli, bread crumbs, eggs, pepper and 3/4 cup of sauce. Place on cook noodles and roll up Jelly Roll style.

In the bottom of a 13x9 place half of remaining sauce on the bottom of the dish, place each roll open side down in the pan, coat the rolls with the remaining sauce cover with tin foil and bake for 45 minutes at 350.
