Chicken & Asperagus stir fry

Ingredients

    1 package 4 chicken breasts,
    10 -15 baby carrots cut lengthwise, sliced water chestnuts, 10-15 spears asparagus, pea pods, 3-5 TBSP soy sauce, 3-5 TBSP lemon juice, 3-5 TBSP water, garlic clove. Can add onions and peppers but we have picky eaters : )

Directions

Cut chicken into chunks and marinade in 3-5 TBSp of soy sauce, 3-5 TBSP of lemon juice and same amount water. After 30 min of marinade, cook chicken in olive (I use coconut oil) oil with garlic clove When cooked throw in cut up carrots. Meanwhile, cut asparagus, pea pods, onion, peppers and water chestnuts and toss in those when carrots are no longer hard. Cook for 10 min. You can toss in cornstarch mixed with water (or flour) if the liquid does not thicken up to a gravy like substance.
