Ingredients

    *Red Mill Organic Coconut Flour, 5 Tbsp
    * Bob's Red Mill White Rice Flour, 5 Tbsp
    * Organic cane sugar, 1/2 c
    * Cocoa, dry powder, unsweetened, .25 cup
    * Baking Powder, 1.25 tsp
    * Baking Soda, 1/8 tsp
    * Salt, .5 tsp
    * Xanthan Gum, 1/4 teaspoon
    * Unsweetened Apple sauce 1/2 c
    * Canola Oil, .25 cup
    * Vanilla Extract, 1 tbsp

Directions

Makes 24 mini brownies

Preheat oven to 325 degrees. Line mini-muffin pan with mini liners.

In a medium bowl, combine baking flour, sugar, cocoa powder, baking powder, baking soda, salt and xanthan gum.

In another bowl, whisk applesauce, oil and vanilla, then stir into dry ingredients.

Spoon batter into muffin tin, filling them three-quarters full. Bake for 15 minutes, or until set.

Allow brownies to cool in pans for 15 minutes, then turn out onto a rack to cool completely.
