Lightened Up Zuccini Bread

Submitted by: KRISTIRAE30

Introduction

Yummy! A bit different texture than the regular stuff but still fabulous. A bit sweet. I think I am going to play with the amount of sugar next batch. Yummy! Ingredients

    Cream in bowl with handmixer:
    1 cup applesauce
    2 cups sugar
    1 Tbsp Vanilla Extract
    1 whole egg
    6 egg whites

    Sift:
    1.5 C Unbleached flour
    1.5 C Whole Wheat Flour
    1 tsp Baking Soda
    1/4 tsp Baking Powder
    1.5 tsp Kosher Salt
    1 Tbsp Ground Cinnamon

After adding the dry to the wet add 2 cups shredded zuccini or summer squash (I blend in food processor)

You can also add raisins, craisins and/or walnuts I didn't though so I'm not sure what that will do to the nutritional info

texture is very different, but the taste is definately still there. i doubled the vanilla and added a touch more cinnamon because i cut the sugar from 2 cups to about 1/2 cup. this was the first zuccini bread i've ever made myself and i thought it was pretty good. - 5/14/10
