Jodi's meatballs and gravy over brown rice

Number of Servings: 4

Ingredients

    1 tube of lean ground beef 4, 4oz servings
    1/4 cup bread crumbs (Italian style)
    4 tablespoons egg substitute
    1 teaspoon morton's lite salt
    1 teaspoon pepper
    1 med onion (sliced thin)
    1/8 cup flour
    3 tablespoons blue bonnet light
    2 cups very hot water
    2 cubes beef bouillion


    1 cup brown rice


Directions

Put Bouillion cubes into 2 cups hot water

Slice 1 medium onion into thin rings

Put first 5 ingredients into a bowl and mix well with hands.

Make out 20 meatballs

Spray skillet with cooking spray, and cook meatballs and onions together. Cooking meatballs for about 15 min.. on each side.

Take meatballs and onions out of pan and set to the side.

Put three tablespoons of margarine into the pan letting it melt. then add your flour a little at a time just enough to absorb the oil.

Stiring constantly, brown flour and margarine on high heat it only takes a few min.
Turn down heat to med. low
Add 2 cups of water and stir over heat until it makes a gravy.

Put meatballs and onions back over into pan turn down on low and let simmer covered for about 40 min.

prepare rice

serve 5 meatballs with gravy over rice.
