Veg. Quiche Cups On the Go

Number of Servings: 6

Ingredients

    1 -10pkg. frozen chopped spinach
    3/4 C. egg beaters
    3/4 C. shredded Reduced fat Cheese
    1/4 C. diced green bell peppers
    1/4 C. diced onions
    3 drops hot pepper sauce (optional)
    Heat Oven to 350 Degrees

Directions

Microwave spinach for 2 1/2 mins. Drain the excess liquid. I know I hate this part too. You can use a muffin pan and line with foil baking cups or a coated square pan. What ever is available for you.
Combine the egg, cheese, peppers, onions, and spinach in a bowl. Mix well. Bake at 350 degrees. for approx. 20 mins. or until a knife inserted comes out clean.

This can be frozen and reheated in the microwave.. Any combination of Vegs. and reduced fat cheeses can be used. Serves 6. It is from South Beach.

  • I HAVE ALSO MADE THESE. THEY ARE GREAT. I HAVE USED FRESH SPINACH CHOPPED UP IN THIS RECIPES RATHER THAN FROZEN AND IT TURNS OUT JUST AS GOOD. YOU CAN ALSO ADD ROASTED RED BELL PEPPER FOR A CHANGE UP AND IT IS VERY GOOD AS WELL. - 1/12/10

  • I love this very easy dish! I make mine a little bit smaller so I can have two for just a few extra calories. It makes it seem like my breakfast is larger. It is also great topped with a little bit of salsa! - 9/30/09
