1 Tablespoon olive oil
2 Tablespoons minced garlic
1 19 oz. can cannellini beans, rinsed
2 small red bell peppers
1 small onion
8 oz. whole wheat pasta
1/4 cup sliced pepperoncinis
1/4 cup chopped fresh parsley
juice of 1/2 fresh lemon
1/4 cup freshly grated parmesan cheese
1/2 bag Morning Star soy recipe crumbles
Meanwhile, cook pasta according to directions and drain, reserving 1/2 cup pasta water. Add pepper and bean mixture, pepperoncinis, parsley and lemon juice to pasta pot. Mix well. Add pasta to pot and toss to mix. Spoon into large serving bowls. Sprinkle with fresh Parmesan and serve.
