Salsa Verde Chicken

Number of Servings: 4

Ingredients

    3 Boneless skinless chicken breasts
    1 Jar of Herdez Salsa Verde (or whatever brand you prefer)
    1 Can Green Chiles - 7 oz
    1 Tbsp Olive oil
    1/4 cup shredded Mexican cheese or sharp cheddar

Directions

Saute the chicken in the olive oil on high until the outside turns white

Add salsa and green chiles and reduce heat to medium until chicken is cooked through (5 to 10 minutes), stirring frequently

I usually serve this over brown or wild rice with a pinch of shredded Mexican blend cheese on top (rice is not included in nutritional tally), but it would probably be good in tortillas too.
