Zucchini Patties with Parmesan Cheese

Introduction

Number of Servings: 4

Ingredients

    1 1/2 Cup grated raw zucchini
    2 Tbsp. minced onion
    1/4 Cup grated parmesan cheese
    1/4 Cup flour
    1/2 cup egg beaters (or two eggs)
    1/4 tsp. oregano
    salt and pepper to taste
    Pam w/ olive oil

Directions

Grate zucchini, then press excess moisture out by placing between two paper towels. Mix together all ingredients except for the Pam. Spray a skillet generously with Pam on medium high heat. Spoon about 2 heaping tablesppons per patty into the skillet. Brown on one side and then flip over. Once flipped, flatten ligthly with the spatula. Cook until both sides are browned nicely. Makes 8 patties and 4 servings. You may top with salsa and low fat sour cream if you choose.
