Lemon Wacky Cake

Introduction

I have loved Wacky Cake, which is usually chocolate, for years, but one day I decided to leave out the cocoa powder and add in lemon extract. It turned out really great. I have also added a Cream Cheese Glaze, which I have also provided a receipe of. Number of Servings: 12

Ingredients

    1 1/2 Cup All Purpose Flour
    1 cup sugar
    1/2 tsp salt
    1 tsp baking soda
    1/3 cup oil
    1 tbsp Vinegar
    1 tsp lemon extract
    1/2 tsp vanilla extract
    1 cup water

Directions

Pre-heat oven to 350 degrees.

Mix together dry ingredients. In a seperate bowl mix together wet ingredients. Add wet ingredients to dry and mix well. Pour into 8" x 8" greased pan and bake at 350 degrees for 28 - 33 minutes, or when golden brown and inserted toothpick comes out clean.

I have also used a loaf pan, and it takes about 40 minutes to bake. I have also added a couple of drops of yellow food coloring to make it look more "lemony."

Makes 12 servings.
