Introduction

This is a veganized version of the corn bread recipe that came on the bag of cornmeal. I had been making it for awhile and then found out my husband's family had used the same recipe for years. It's sweet, northern style, and somewhat crumbly. Great in soups and chili, or for breakfast with jam. This is a veganized version of the corn bread recipe that came on the bag of cornmeal. Ingredients

    1 cup corn meal
    1 cup flour (white or whole wheat or half and half)
    1/4 cup sugar
    4 tsp baking powder
    1 tsp salt
    1 1/2 tsp EnerG Egg Replacer powder
    1/4 cup canola oil
    1 cup soy milk (any brand) mixed with 1 tsp cider vinegar

Directions

1. Preheat oven to 425 degrees F. Grease 8" square baking pan or 9 muffin cups.

2. In a large bowl, mix together flour, cornmeal, salt and baking powder. In a medium bowl, mix egg replacer powder with 2 tbs water. Add soured soymilk and oil and mix well. Pour liquid ingredients into dry ingredients, and stir until just mixed. Batter should be lumpy with no dry clumps.

3. Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into center comes out clean, and cornbread is golden brown.

Makes 9 squares or muffins.
