2 large ripe peaches, sliced into wedges
2 large tomatoes, sliced into wedges
1/2 medium to large onion, sliced into wedges and broken apart
1 1/2 tbsp red pepper flakes
2 tbsp olive oil
3 tbsp fresh cilantro, coarsely chopped
2) stir in red pepper and cilantro
3) pour olive oil and juice lime over the salad. Mixed together until oil, juice, and spice are evenly distributed over the fruits and veg.
4) Wonderful alone or with grilled fish or chicken.
