Introduction

There are MANY variations to this dish you can switch up the veggies for anything you like, Ive seen other recipes like this but not using the same veggie combo. This is the one I prefer. ENJOY! Number of Servings: 9

Ingredients

    1/4 C. Skim milk
    5 Large Eggs
    1 C. chopped green peppers (bell peppers)
    1 C. Canned Mushrooms
    1/2 C. Shredded cheddar cheese
    1/2 C. Spinach chopped

Directions

Sautee green peppers until soft. Combine milk and eggs Add peppers, mushrooms, cheese, & spinach. Pour into a greased muffin pan. Makes about 9-10 depending on how much you put in each. Bake at 350 degrees for approx 30 minutes or until set and golden brown.
