Pepperoni Salad

Introduction

Ingredients

    Turkey Pepperoni - One serving (16 slices), chopped
    Black Beans - 1/2 Cup
    Chopped fresh onion - 1 Tbsp
    White Rice -1 1/2 Cup
    Olive Oil - 1 Tbsp
    Seasoned Rice Vinegar - 1 Tbsp
    Salt and Pepper to taste

Directions

This list of ingredients is just for one serving.

Make the rice according to the package directions (I usually use asian sticky rice). Heat up the black beans in the microwave.

When the rice is done, put the black beans over the rice in a bowl. Top with onion, pepperoni, oil, vinegar, salt and pepper.

I know it sounds strange but it is SO good!
