Peach Crumble

Introduction

Number of Servings: 10

Ingredients

    2 lbs. fresh peaches, peeled and chopped (about 6 cups)
    2 t sugar
    1/4 c pecan halves (or other nut of your choice)
    1/2 c oats
    1/4 c whole wheat flour
    1/3 c packed brown sugar
    2 T unsalted butter, chilled

Directions

Preheat the oven to 375-degrees.

Put peaches into an 8 or 9 inch square baking pan. Sprinkle with sugar. You can also add cinnamon (about 1/2 t) and nutmeg (pinch) if desired.

Use a food processor or blender to coursely grind pecans. Add oats and blend for 10 seconds more. Combine with flour and brown sugar. Cut in the butter until crumbly. Sprinkle mixture over the peaches.

Bake 30 minutes, or until the peaches are tender and the topping is golden brown. Serve warm or at room temperature.

Recipe makes six generous servings.

    Sounds GREAT -- a word of caution -- directions say it makes 6 generous servings, but nutrition info says 10 servings, so that means calorie count is nearly double if you serve 6. So if you're on a tight calorie range, be sure to log in correctly. - 8/4/09

    This was much better than I thought it would be. My 12-yr old son loved it too! I don't think you need to process the oats. I left out the pecans (son doesn't like nuts), so whole oats would have been good for texture. Still, it is very sweet, and makes a great dessert! - 8/1/07

    I put this recipe in my recipe maker...using frozen peaches, splenda, 1 pat of butter, the recipe comes to just over 100 calories for 6 servings. WORKS for me! - 8/4/09

    I used 4 c of fresh and 2 c of frozen peaches (from necessity, as I only had 4 peaches). It turned out great--just a bit on the mild side. Bet it would be super good with some low-cal vanilla ice cream on top! I do miss the tartness factor in this recipe. A little fresh lemon juice next time! - 7/24/07

    Sounds great, but I was noticing the 10 servings for NI, too. I like the suggestion of adding some blackberries, raspberries or a bit of lemon juice for some tartness. And yes, no need to grind up the oats. In fact we like the texture better when they are whole. - 8/4/09

  • I could not stop eating this! I made mine extra healthy by using no butter, only sprayed pan with cooking spray. Using honey instead of sugar gave it the moistness needed.   • Has a good taste. Be sure there is enough juice for the peaches so that the dish doesn't dry up when baking. I used canned peaches ( rinsed off very well) since that's what I had on hand. I also added almond extract for added flavor. Will make again! - 1/25/10
