IntroductionHoney adds just a little sweetness to a rich-tasting whole grain cornbread. Honey adds just a little sweetness to a rich-tasting whole grain cornbread.
1 cup whole wheat flour
1 cup stone ground cornmeal
1 tbsp. baking powder
1/2 tsp. salt
2 tbsp. honey
1 cup buttermilk (or 1 cup lowfat milk mixed with 1 tsp. lemon juice)
1/4 cup unsalted butter
Mix flour, cornmeal, salt, and baking powder.
In a separate bowl, mix the milk, honey and egg. Add the wet ingredients to the dry and mix thoroughly.
Stir in the melted butter.
Bake in a greased pie pan for 20-25 minutes or until a toothpick comes out clean.
