SOUTH BEACH CHOPPED SALAD WITH TUNA

Introduction

Ingredients

    Salad:
    1 can (6 oz) water packed tuna
    1/3 cup chopped cucumber
    1/3 cup chopped tomato
    1/3 cup chopped avocado
    1/3 cup chopped celery
    1/3 cup chopped radishes
    1 cup chopped romained lettuce

    Dressing:
    4 tsp extra-virgin olive oil
    2 Tbsp fresh lime juice
    2 cloves garlic, finely chopped
    1/2 tsp black pepper

Directions

To make the salad: layer the tuna, cucumber, tomato, avocado, celery, radishes, and lettuce in a decorative glass bowl.

To make the dressing: Mix the olive oil, lime juice, garlic and pepper. Drizzle over the salad.

*I like to just throw it all together rather than layer. Also, recipe says it makes one serving, but I like to make it 2.

  • Wow this is SO good! I added capers , chopped onion & cilantro (to use it up). I doubled the recipe and added two cans of Albacore so I can just add it to a bed of chopped romaine to make prep even faster. Thank you for sharing! - 10/11/14

  • Great salad. Even my husband who wouldn't eat avocado now loves it! do add more garlic for him. I make one recipe and we split it, more than enough for lunch or light supper. - 4/6/11

  • This has been one of my favorite salads - after a workout, I can't wait to get home to put this together. The big question I have is why it is so high in calories, I guess because of the oil and avacado?? Anyway it is yummy!! - 2/19/10
