This recipe is a rewrite of SP user LORIAN's recipe for Stuffed Yellow Squash!Her recipe was so incredibly delicious, I had to try it with zucchini! Since medium zucchini are about twice the size of summer squash, I increased the amounts on the ingredients accordingly.

Ingredients

Zucchini, 2 medium with skin
Bread Crumbs, Italian style 3/4 cup
Onions, raw, 1/2 cup, chopped
100% Grated Parmesan Cheese, 1/2 cup
Salt, 1/2 tsp
Garlic-minced 2 tbsp.
Extra Virgin Olive oil, 2 tbsp
Directions
Heat oven to 375.
Heat olive oil in large pan.
Wash and cut zucchini in half, lengthwise.
Using spoon, scrape out centers and chop together with onion.
Addd to pan, saute.
Stir in bread crumbs, salt, garlic, and parmesan cheese. Stuff squash and transfer to baking sheet.
Cook for 20 minutes. Sprinkly with paprika, if desired.
