Zucchini Pie

Introduction

Light summer entree adapted from a recipe my mom cut out of the newspaper 30 years ago! Light summer entree adapted from a recipe my mom cut out of the newspaper 30 years ago!
Number of Servings: 8

Ingredients

    2 c. sliced zucchini
    1 small onion, diced
    2 T Brummel & Brown butter substitute (or other)
    1/2 t parsley flakes
    1/4 t. oregano
    1/4 t. basil
    1/4 t. pepper
    1/4 t. garlic powder
    salt to taste
    3 egg whites
    6 oz shredded muenster or mozzarella cheese
    1 ready pie crust
    Dijon mustard

Directions

1. Fry zucchini and onion in butter substitute in a non-stick pan.
2. Add seasonings and remove from heat.
3. Beat egg whites in large bowl until "broken" and stir in cheese. Then stir in veggies.
4. Line pie pan with crust to fit. Spread a thin layer of mustard over crust and pour egg and veggie mixture into crust.
5. Bake at 350 degrees for 15-20. Allow to sit ~10 minutes before serving.
