Seasoned Sweet Potato

Introduction

Easy side dish. Easy side dish.
Number of Servings: 2

Ingredients

    1 sweet potato, cut into 1" cubes = 2 cups
    .25 cup chopped onion
    1 T. butter
    dash of cinnamon, salt, and pepper
    .75 c. water

Directions

In a 2L. saucepan, sweat onions, butter and cinnamon. When onion is translucent, add sweet potato cubes, salt and pepper, and stir. Add water, cover and simmer for 10 minutes, stirring occasionally.

The water should be absorbed into the potatoes, and they should be fork tender when done.

Serves 2.
