Easy Chicken and Courgette Risotto

Introduction

This isn't a risotto in the true sense of the word - it's much easier! And delicious too!


(This is not in the calculations, but I recommend some extra toppings for this dish if your diet can take it - sprinkle around 15g toasted sunflower seeds and around 25g grated cheddar cheese on each portion for an additional 190 extremely delicious calories!)

Ingredients

    100g brown rice
    1 chicken stock cube
    1 tsp olive oil
    2 chicken breasts, diced
    200g courgette/zucchini, diced
    100g mushrooms, diced
    1 onion, diced (about 120g)

Directions

Boil the brown rice according to pack instructions, with chicken stock cube in the water.

Cook the onion in a little oil until translucent, then add the chicken, courgettes and mushrooms, and cook through.

When rice is cooked, drain it well and stir into the chicken and veg.

Serve.
