Broccoli Patties

Introduction

Number of Servings: 12

Ingredients

    2 cups cooked broccoli florets
    1 large red potato
    1 cup bread crumbs
    1 egg
    ΒΌ cup sharp cheddar cheese (shredded)
    salt, garlic and other spices to taste.

Directions

Makes 12 large patties

Preheat oven to 300 degrees
Slice raw potato into quarters
Put potato in food processor and pulse till it is well chopped.
Add broccoli and do the same.
Add other ingredients. Pulse again till it looks slightly lumpy. It should be a very firm paste, almost dough like.

Spray baking sheet with cooking spray
Put "dough" on baking sheet in 12 portions
Bake for 15 minutes at 300 degrees.
Turn up broiler and bake for 3-4 more minutes or till nice and brown and toasty.

Let cool and enjoy

    Tried recipe and did like it. Yes, kids would go for it, especially as a snack. Do you have to tell them brocolli?
    Even tho it is a bit high in carbs for me, I will be making it now and then just for the taste and chewy. - 4/15/07
