Ingredients

1 lb. chicken breast
1 cup celery, sliced diagonally
1 cup carrots, sliced diagonally
1 small onion, halved and thinly sliced
1 5 oz. can sliced water chestnuts, drained
1 5 oz can bamboo shoots drained
1 cup sliced fresh mushrooms
1 16 oz can bean sprouts, rinsed and drained, or fresh if available
1 1/4 cups chicken broth
2 Tbsp. corn starch dissolved in 1/4 cup soy sauce
2 Tbsp. oil for stir frying
Directions
Add 1 Tbsp. oil in large skillet or wok, heat until hot. Stir fry chicken until no longer pink, remove and keep warm. Add remaining oil. Stir fry celery, carrots and onions 2-3 minutes; add remaining vegetables and stir fry 2 minutes more. Add broth and bring to boil. Stir in corn starch mixture and cook until clear. Return meat to skillet or wok simmer over reduced heat 1-2 minutes. Serve over rice or chow mein noodles.
