Naked BBQ Seitan burrito

Introduction

This is a homemade, vegetarian version of the ancho chile bbq chicken burrito from qdoba. (You can use any bbq sauce you are comfortable with, sweet baby rays has "natural flavors" which might be a problem for some veg'n people.) But I'm sure you can find a suitable substitute if it is. Also the sour cream is not necessary if you are not one who eats dairy.

Also, it says to use 'newmans own black bean and corn salsa' but I just make my own with some corn, onions, jalapenos, black beans and seasoning to taste (garlic powder, chili powder, cumin, salt, etc)

This also has almost half of the calories of the bbq chicken burrito from qdoba, so, enjoy!

Ingredients

    1/2 Cup Brown Rice
    1/2 Cup Black Beans
    4 tablspoons corn salsa (I use 4, you can use more or less)
    4 oz of Seitan
    2 TBLS daisy light sour cream
    2 TBLS BBQ sauce (sweet baby rays or more veggie friendly versions that I am currently unaware of)

Directions

Steam your rice and season to taste with chili powder, onion powder, garlic, salt, cumin. boil your black beans and I personally like to pan fry my seitan in olive oil, add the bbq sauce and pour over the cooked rice and beans, add corn salsa and sour cream to top it off, and serve! It really doesn't take long to prepare this meal at all.
