Introduction

Ingredients

    1 cup whole wheat flour
    2 tsp baking powder
    1/3 Cup (organic) milled flax seed (ground)
    1/2 tsp organic (sea) salt
    1 TBSP (organic) cane sugar
    2 (organic) large brown eggs, separated
    1 1/4 C (organic) milk (1%)
    3 TBSP (organic) extra virgin olive oil

Directions

In a medium sized bowl, combine the flour, ground flax seed, baking powder, salt and sugar; set aside.

Separate yolks from eggs- put the yolks in one small bowl, and the whites in another. Beat the egg whites just until stiff, moist peaks begin to form. I use just one beater on my electric mixer). In the other bowl, lightly beat the yolks. Add the yolks, milk, and oil to the dry ingredients, and blend well. Fold in the beaten whites.

Bake in a preheated waffle iron according to the manufacturer's directions. Makes about 10 4-inch square waffles.
