Honey Balsamic Shrimp Skewers

Submitted by: CDISHMAN1

Introduction

This is an adaption to a honey balsamic chicken that I found on sparks. It only subs shrimp in place of the chicken and omits the herb rub. However the balsamic and honey makes and excellent glaze for the shrimp. Serve it over a warm brown rice pilaf and it is a meal! Directions

Soak wooden skewers in water for 30 minutes before using or use metal skewers

Heat grill to medium high heat or heat oven to 350.

Place cleaned shrimp onto skewers leaving room to cook. (Add onion between shrimp if desired but add in for accurate calorie count)

While the shrimp are cooking: In a small sauce pan, add balsamic vinegar and honey and heat over medium high heat until it bubbles and thickens just a little. Keep glaze warm and reheat as needed but as little as possible as it thickens quickly.

Place shrimp skewers onto grill and grill for 5 to 8 minutes turning once or cook in oven turning once. Just after shrimp begin to turn pink brush with glaze and turn to glaze other side. Allow to cook until done. Once shrimp are completed remove from heat right away.

Serve shrimp over rice or with your favorite sides!!!
