Summer Vegetable Soup

Ingredients

    1 litre good Vegetable stock (there is a recipe in my recipe box for anyone looking)
    150g Broad Beans
    150g Shelled Peas
    150g Green Beans, sliced 2cm long
    1 bunch each; mint, parsley, coriander (chopped)
    2 spring onions
    juice of 1/2 lemon
    salt and pepper to taste

Directions

Heat stock and season well with salt and pepper.

Add Vegetables and simmer gently for 3-4 minutes, until tender then remove from heat.

Gently stir in herbs, lemon juice and spring onion. Serve hot.
