Deb's "Go To" Veggie Stir Fry

Introduction

"Go To" is a term used in fly fishing for your favorite all round fly. The fly you pull out when all else fails or you don't know what they want...its also the fly you have the most numbers of in you box.

This is easy, very quick to prepare and a good ways to stuff those good veggies into your daily plan. I cook this up most nights now and it always gets cleaned up by the rest of the gang.

Number of Servings: 4

Ingredients


    3 cups fresh raw Broccoli, chopped for stir fry including most of the stems.
    Baby Carrots (12-15), sliced in quarters length wise
    1 medium Vidalia Onion (or one half large) (any onion will do) chopped in bite size chunks.
    One stalk Celery (optional) chopped bite size
    1/4 cup (small hand full) Cashew nuts...I just get the cheapest (broken )
    1tbls Olive oil
    2 tbls Kikkoman Stir Fry Sauce or other local favorite.

Directions

Chop all veggies into stir fry sized bits, can be set aside happy together in one large bowl.

Heat fry pan on high.

Some put oil in pan and heat....Dr. Oz suggest adding oil the the veggies, mix than put into hot pan so oil won't break down. Your choice.

Drop veggies in and stir for about 3-4 minutes.
Remove from heat.
Add Stir Fry sauce and stir in. (If you like your veggies on the soft side a few tbls water and let steam off)

Add Cashews and stir.

Done

Divide into 4 servings.

I'm diabetic and fit two servings of this with my main meal almost every day.
