Stuffed Bell Peppers (Serves 4)Submitted by: MRSKCRAIG
1lb Ground Chicken
4 Large Green Bell Peppers
1/2 Medium Yellow Onion Chopped
3/4 Cup Mushrooms Sliced
1 cup Tomato Sauce
1.5 Cup Rice Cooked
1/2 Cup Cheddar Cheese
1/4 Cup Water
Boil Peppers for 5 Minutes then remove and rinse in Cold Water. Cut off top to make an opening.
In Non-Stick Skillet Cook Chicken, Onion, and Mushroom until Chicken is no longer pink. Add Tomato Sauce.
Meanwhile cook rice as directed on package.
Mix together Rice and Chicken Mixture.
Prepare baking dish by spraying non-stick cooking spray and adding water.
Place Bell Peppers in dish and stuff with mixture.
Cover with tin foil and bake for 40mins. Remove and sprinkle with cheese. Return to oven for 5 more minutes.
Take out and enjoy!
