Soaked Flour Cracker Recipe

Introduction
An uber healthy cracker recipe, using soaked flour and coconut oil. An uber healthy cracker recipe, using soaked flour and coconut oil.Number of Servings: 10
Ingredients

2 1/2 cups whole wheat pastry or spelt flour
1 cup yogurt, kefir, or soured milk
1 tsp sea salt
1 1/2 tsp baking powder
4 tbsp melted extra-virgin coconut oil
Directions
Soak flour in yogurt overnight or for 8-12 hours. (alternatively, use 2 1/2 cups sprouted spelt or wheat flour and use 1 cup coconut milk in place of yogurt, omitting soaking period).
Preheat oven to 425 degrees (when I made these I set the oven at 450, which I think was too hot).
Mix all ingredients. On floured countertop, roll thin (1/4″). Cut into squares with pizza cutter. Spread crackers on lightly oiled sheets. Bake at 425 for 8-12 minutes, turning to brown both sides of each cracker as needed.
