Lowfat Blueberry scones

Introduction

I found this recipe online and modified it to include Sun Crystals instead of sugar. You can use 1/3 real sugar. I found this recipe online and modified it to include Sun Crystals instead of sugar. You can use 1/3 real sugar.

Ingredients

    1 cup white flour
    1 cup wheat flour
    1/3 cup sugar
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    4 Tbl unsalted, cold butter
    1/3 cup egg substitute
    3/4 cup buttermilk
    1 cup fresh blueberries

Directions

Mix together dry ingredients. Cut butter into the mixture, using two knives or pastry blender until it looks like a coarse meal. Add egg substitute and buttermilk and mix with fork until blended. Add berries and fold them in gently. Drop by tablespoon onto greased cookie sheet. Bake at 375 degrees for about 14 minutes.
