Rotini Chicken Casserole

Ingredients

    2 ¾ c uncooked tricolor rotini
    ¾ c chopped onion
    2 garlic cloves
    1 T olive oil
    3 c cubed chicken breast
    1 can reduced-fat cream of chicken soup
    1 ½ c fat-free milk
    16 oz pkg frozen Italian blend veggies
    4 oz shredded reduced-fat cheddar
    2 T minced fresh parsley
    1 ¼ tsp thyme
    1 tsp salt

Directions

Cook pasta according to package directions. Meanwhile, in skillet, sauté chicken, onion and garlic in oil until tender. Drain pasta; place in bowl, add onion mixture, soup, milk, veggies, cheese, parsley, thyme and salt.

Pour into GREASED 3 qt baking dish. Cover and bake at 350 for 25 minutes. Bake, uncovered, 10-15 minutes longer or until heated through.
